hot & sour expensive wheat stew

1 Tbsp neutral vegetable oil

kernels and "milk" from 1 ear of corn

8 shiitakes, halved and sliced thin

3 shallots, sliced thin

1/4 cup sliced Chinese cabbage

1/4 cup rough chopped Chinese chives

2 cloves garlic sliced thin

2 scallions, sliced thin

1/2 cup farro

1 qt vegetable broth

1 cup lacto fermented tomatoes (recipe someday)

1 tbsp olive oil

1 tsp fried garlic-shiitake vinegar (also someday)

1/2 tsp ground white pepper

salt to taste

  1. Heat a heavy saucepan over medium heat.

  2. Add oil and vegetables and saute several minutes, stirring often. Sprinkle with salt.

  3. Add farro and toss to coat.

  4. Add vegetable broth and bring to a simmer.

  5. Cook until farro is tender - about 15 minutes.

  6. Stir in remaining ingredients and serve.
