Elderberry the useful

Elderberry Shrub

3 cups cider vinegar

2 lbs solid palm sugar

4 oz dried elderberies

1 Tbsp kosher salt

  1. Combine all ingredients in a stainless steel saucepan over low heat.

  2. Bring to a simmer and cook until all of the sugar has dissolver and the elderberries have begun to disintegrate - about 45 minutes.

 

Elderberry & Elderflower Gintonic

2 oz London Dry gin

1 oz elderberry shrub

6.8 oz elderflower tonic

flowering rosemary sprig for garnish
